Applications
Bio-based Ethyl Acetate is a colourless, fragrant, low-boiling solvent primarily used as an aroma enhancer and flavouring agent. For example, it is used in artificial fruit essence and gives artificial flavours such as Pear, Pineapple, Bananas, Peach and Strawberry in confectionery, ice-creams, cakes etc. Coffee beans and tea leaves are decaffeinated with this solvent. In a process that can take up to 10 hours, coffee beans are rinsed with an ethyl acetate solution to remove the caffeine from them. "
